Simple and easy to make

Ingredients

  • 1 cup (270g) natural peanut butter
  • 1/3 cup (67g) Swerve (erythritol) or coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper. Put all the ingredients in a medium bowl and stir with a wooden spoon until smooth.
  2. Scoop out the dough into 1 tablespoon portions and place a few inches apart on the prepared baking sheet. Press a fork into the top of each cookie to flatten it slightly. Bake until the bottom edges are beginning to brown, 18–20 minutes. Let the cookies cool on the baking sheet; they will firm up as they cool.
  3. Store in an airtight container for up to 1 week.

Oven Baked Chicken Nuggets

Ingredients

  • 1 ½ cups (90g) panko breadcrumbs
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • ½ tsp. garlic powder
  • ¼ tsp cayenne pepper
  • 2 eggs
  • 2 tbsp. almond milk
  • 1 lb. (450g) boneless skinless chicken breast, cut into cubes

Instructions

  1. Preheat the
  2. oven to 400F
  3.  line a baking tray with baking paper.
  4. Place the panko breadrumbs into a medium bowl, add the dried spices and mix through. Set.
  5. In a separate medium bowl, whisk together the eggs and almond milk.
  6. Dip the chicken first into the egg mixture
  7. and then toss in the breadcrumbs until completely coated. Place each cube of chicken onto the lined baking tray and bake in the oven for 15-20 minutes, until golden and cooked through.
